The Emerald Necklace series tells a foundational piece of the Trillium Brewing story. If you’ve visited our home of Boston, you’ve likely encountered and enjoyed a section of the Emerald Necklace. Beginning downtown at the Boston Common and Public Garden, extending out to Back Bay, and all the way to Dorchester, this 1,100 acre, seven-mile-long public park system is a cherished green oasis in the heart of the city. Years ago, JC cultivated a plot in the Fenway Victory Gardens, where he grew edible and decorative plants, trees, and even some hop bines! The second beer in the series takes us to The Riverway, a 34-acre park that serves as a border between Boston and neighboring Brookline. Dual-hopped with two favorites from the Pacific Northwest, Citra and Mosaic each display their distinct tropical traits. We taste orange sherbet, meyer lemon, and juicy peach. A gentle sweetness that never nears cloying is embraced by a refined bitterness rounding out each sip.

A hazy IPA brewed with a healthy dose of Flaked Wheat, Flaked Oats, and Golden Promise to give it that heavy haze and creamy mouthfeel you would expect. We then fermented with Hornindal Kveik yeast to compliment the hop profile with its tropical/stone fruit esters. Lastly we double dry hopped with Galaxy and Dolcita hops, giving it a strong citrus and stone fruit profile. It finishes with a slight bitter bite to balance out the sweetness. Cheers!

Hanse is an unfiltered ("Keller") Pilsner. Straw-gold in color, crisp and clean-finishing with assertive hop bitterness. Noble hops are present on the palate. 2018 RateBeer Gold Medal pale lager.

Peacharine, Mosaic, Eclipse & Quantum Eclipse-Hopped Double India Pale Ale

UPPER CASE has a delicate, dry pilsner malt character with a smooth, soft, doughy mouthfeel from the raw wheat, oily hop resin which all serves as a canvas for this twice dry hopped 9% double IPA. Overipe mango, pineapple and passion fruit aromas leap out as the beer is poured. The impression of tropical fruit also takes the lead in the flavor which is layered further by white wine, pine resin and grapefruit zest. Hopped primarily with Mosaic with supporting roles played by Galaxy, Citra and Columbus.

This fruited sour is part of our Gemini Series that focuses on small one-off batches. The duality of complementary and sometimes contrasting fruits is blended with other adjuncts to enrich the flavors further. This version features Raspberry, Sweet Cherry, Lime, and Blue Raspberry (our favorite summertime popsicle).

This traditional Kölsch, served in a Stange glass, is an ale-lager hybrid paying homage to the tapsters of the same name found in Köln, Germany. An exceedingly drinkable pale beer exuding a bit of fruit on the nose from its unique yeast strain, it pours a pale golden color with a light malt presence on the palate, showcasing a clean, crisp finish.

Jai Alai IPA is a bold, citrusy and balanced India Pale Ale that involves six different hop varietals used generously.

Smithwick's is a clear beer with a rich ruby color and creamy head. Clean and delicate aroma with different individual notes: from the top fermentation by the Smithwick yeast come aromatic esters creating a fruity aroma. Ale Malt contributes aroma hints of biscuit and caramel. Refreshing and clean taste with sweet/malty notes from the ale malt, and hints of roast/coffee from the roasted barley.

With a wonderful floral aroma, well-balanced malt sweetness, crisp hop bitterness, and a soft dry finish.
