Hazy Double India Pale Ale

Double Dry Hopped Double New England IPA hopped with Citra, Rakau, and Citra Cryo.

A liquid monument to the glory of the pumpkin, the most noble of all the gourds, this Imperial Pumpkin Ale is brewed with cinnamon, allspice, cloves, nutmeg, and vanilla to emulate the flavors of a decadent, piquant pumpkin pie. The gourd is good, indeed.

Classically brewed with thick portions of boiled Moravian malt and plentiful amounts of traditional Saaz hops for an authentic Bohemian flavor. The "Bublina" or bubbles in this beer are best experienced in Tubinger tankards from Czech side-pull faucets.

A fusion of grape juice and candied citrus greet the palate while accents of white-wine, grassy hop, and a mellow bitterness reveal themselves on a smooth, dry finish. We continue to brew Mettle in recognition of our devoted following of hopheads that have supported us from the very beginning.

The Emerald Necklace series tells a foundational piece of the Trillium Brewing story. If you’ve visited our home of Boston, you’ve likely encountered and enjoyed a section of the Emerald Necklace. Beginning downtown at the Boston Common and Public Garden, extending out to Back Bay, and all the way to Dorchester, this 1,100 acre, seven-mile-long public park system is a cherished green oasis in the heart of the city. Years ago, JC cultivated a plot in the Fenway Victory Gardens, where he grew edible and decorative plants, trees, and even some hop bines! Featuring the largest standing body of water in the entire park system, the 4th addition to our Emerald Park series takes us to Jamaica Pond. Golden yellow and moderately hazy in appearance, Amarillo's bright citrus aromas draw us in. Notes of tangerine peel, lemon verbena, and makrut lime pop upfront, eventually giving way to Simcoe's pine-forward dank character. Finishing dry with just enough bitterness, Jamaica Pond's scrubby carbonation leaves the palate refreshed and ready for the next sip.

Our flagship IPA features a huge citrus and tropical fruit hop character from the Mosaic, Citra & El Dorado hops and softer, smoother mouthfeel from the adjusted water chemistry, higher protein malts, and lower attenuation. The end result is a beer reminiscent of citrus juice with extra pulp, thus the name Juicy Bits.

This fruited sour ale was brewed with red winter wheat, flaked oats, and soured with our house culture for a juice-like acidity. We then conditioned on mango, cara cara orange, and vanilla beans. The vanilla provides a light backbone to the malt before being completely consumed by waves of mango mimosa and orange juice zing.

Grand Royal is a Munich-style pale lager brewed with European malts and noble hops.

We made this beer in honor of a dear friends of ours, whom we lost suddenly. She loved our Falcon Punch & Michelob Ultra, so we made this crushable hoppy Blonde as an in between both beers. "I Love your whole face" was what she said to everyone before she left.

Smithwick's is a clear beer with a rich ruby color and creamy head. Clean and delicate aroma with different individual notes: from the top fermentation by the Smithwick yeast come aromatic esters creating a fruity aroma. Ale Malt contributes aroma hints of biscuit and caramel. Refreshing and clean taste with sweet/malty notes from the ale malt, and hints of roast/coffee from the roasted barley.

Jai Alai IPA is a bold, citrusy and balanced India Pale Ale that involves six different hop varietals used generously.
